Cranberries and apples!

I'm feeling thankful for so many things; prayerful for everything else! 

One thankful thing is cran-apple! That's why I was so happy to find my favorite Jonathan apples in the store at the same time there are cranberries! I made the best cranapple sauce and even froze several quarts so I could enjoy it all winter.

Here's how I did it: cook the cranberries as directed on the package except only use 1/2 cup sugar. The Johnathan apples are naturally sweet already; I prefer my sauce sweet-tangy (just like me). 
Freshly washed and cooked. The pop as they boil.
Wash and slice enough apples to fill your pressure cooker 1/3 full. (If you don't have a pressure cooker, it will take more water and more time to boil the apples until they are fully cooked.)
No need to peel since only the fruit pulp comes through the sieve.
Add 1/2 cup water and bring the sealed cooker up to pressure. Turn down the heat and allow it to pressure cook for 5 minutes. The best part about a pressure cooker is that it cooks so quickly, hence retaining the nutritional value of the apples. Next, I cooled the cooker by running cold water over the top. Then I used my old food sieve from Grandma's kitchen (one of my favorite inheritances) to press the apples and make the sauce. I don't have to peel or core apples because I use the sieve.

Next I used my Betty Crocker Cookbook (so I could follow a recipe "exactly") and added spices as if I were making apple pie. Then I stirred in the cooked cranberries and, voilĂ , cran-apple sauce!

This is delicious and a beautiful shade of red too! Just think of the vitamins and antioxidants in here! It practically makes you healthy just to read about it!

CHICKEN ENCHILADAS

Cheesy chicken enchiladas
Can you say “Yum!”? This is one of those recipes that I cut out of a magazine thinking, "I might be able to serve this someday". Chicken and Tex-Mex makes me happy!  I sometimes prepare chicken too often according to my sweet hubby, but even he never complains when I am ready to serve these for dinner.

Velveeta used to be so much cheaper, but even at today’s prices, I always use Velveeta brand vs the store brand of cheese. The Philadelphia cream cheese makes these so creamy and delicious. You can use left-over chicken or you can cut some fresh chicken into cubes and have that cooked up PDQ!

Cooked chicken, spices, cream cheese
As you can see, I mix this up in a skillet on the stove instead of using the microwave. It works great in the microwave if you have left over chicken.

½ cup chopped onion
1 garlic clove, minced
1 tablespoon oil
2 cups chopped cooked chicken
1 can (4 oz) chopped green chilies
¼ cup chicken broth
2 teaspoons chili powder
1 teaspoon ground cumin
4 oz cream cheese, cubed
6 flour tortilla (6 or 8 inch)
¼ pound Velveeta, cubed
2 tablespoons milk
½ cup chopped tomato, divided (I use my salsa instead) 


Microwave onion, garlic and oil in 2-quart microwave-safe casserole on High 2 – 3 minutes or until tender, stirring after 2 minutes.  Stir in chicken, chilies, broth and seasonings.  Microwave on high 4 minutes or until thoroughly heated.  Add cream cheese; stir until cream cheese is melted.  Spoon 1/3 cup chicken mixture onto each tortilla; roll up. Place, seam side down, in 8-inch square microwave-safe baking dish.  Microwave Velveeta, and ¼ cup tomato in medium microwave –safe bowl on high 2 to 3 minutes or until Velveeta is melted, stirring after each minute.  Pour sauce over tortillas; top with remaining tomatoes.  Microwave on high 6 to 8 minutes or until thoroughly heated, turning dish after 3 minutes.

Makes 6 servings.

Stir until the cream cheese is melted. Then fill and roll the tortilla shells.


I usually double this recipe. I love to make this for family and friends! One other thing I have discovered, if you prepare these ahead of time, like I have done in the past, it will take a bit longer to heat these since they have been in the refrigerator. I bake them at 325 until heated thoroughly. Be careful not to overcook them – been there and done that! Don’t burn the cheese! But do use a meat thermometer to make sure they are fully heated before you serve them.

CRAVING CASSEROLE

Do these cooler, rainy days make you want to prepare something warm and filling for supper? Obviously, that’s what I’m thinking!  This is a favorite go-to recipe.  My mother-in-law Kathy Schroeder who also happened to be one of the nicest people to come into my life, gave this recipe to me! I am ever so grateful she was part of the package when I married Joel.  Ok, back to this recipe!

My old, abused recipe.
It is quick and easy. It can be made as a skillet dinner or put it in a casserole dish to microwave or bake.  Which ever way you prefer, it will turn out delicious!

Since this is a hand-me-down recipe, there are not exact measurements.  You can use a cup or two of leftover ham or cube a ham steak. You can gauge how much ham and macaroni your family will eat in a meal and adjust your ingredients accordingly.

Boil macaroni according to package directions, drain and set aside.

Saute onion, bell pepper and ham 

SautĂ© onion and pepper in a tablespoon or two of butter.  Stir in chopped ham and heat thoroughly.  Mix in cream of mushroom soup, milk, a tablespoon of corn starch and  the Velveeta.  I usually cube about 1/3 to 1/2 pound of cheese (not 1/3 of the whole block). Stir until the cheese is melted. Add drained macaroni and stir. At this point, it is a skillet dinner and once all the ingredients are heated thoroughly it can be served.  If you prefer, you can transfer everything to a casserole dish and melt the cheese by placing the dish in the oven  for about 30 minutes or however long it takes your family to gathered around the table.  This casserole is a delicious make and take dish.

To round out the meal, we enjoy green beans, crunchy carrots, and garlic toast on the side.

Meat loaf


Be careful who you invite to the table to enjoy this mouthwatering dish. My dinner guests each wanted the end slice. Someone, who shall remain nameless, sliced down the sides of the loaf! I think he likes to torment me.

For me, cooler weather and oven baked meals go hand in hand.  I followed the recipe I found exactly...except with these changes!  I can't help myself from tweaking recipes I haven't even followed once. But that's the kind of girl I am. This was delicious, by the way.

It could be made into for smaller loaves or even meatballs, which would make it easier to put away for a second meal. You might have to adjust the baking time. The flavor and texture were just right. Since I used my food processor to make the bread crumbs, I continued to use the food processor to mix all the ingredients. That probably accounted for the smooth texture. 

Enjoy!

Preheat oven to 350 degrees. Grease the bottom of 9x13 pan

Mix together 
2 lbs ground beef
2 beaten eggs
3/4 cup milk
1/2 cup dried bread crumbs (I used my food processor to crumb leftover buns I had in the freezer)
1/4 cup chopped onion
1 tsp. salt
1 tsp pepper
1/2 tsp. savory (the original recipe called for sage)

Shape into large loaf.
Bake 50-60 minutes or until internal temperature reaches 160 degrees. 

Top with a mixture of:
1/2 cup ketchup
2 tbls. Brown sugar
1 tsp. powdered mustard

Return to oven and bake for 10 more minutes.

WHY ME LORD?


I am so blessed! Why me Lord? I ask that all the time.  I have so much and am so grateful! Days like yesterday, give me pause to give thanks! We are settling into our new home, we have all we need, and the sun is shining! Thank you, Lord!

It was so much fun to enjoy cooking dinner with Dayna last night too! She can easily get here after work and we chatted the hours away! Then she took a plate of food for Travis’ dinner too! 

Yesterday, I saw a FB post about baking garlic biscuits in a ring and they looked like the perfect accompaniment for our baked chicken, potato casserole and green bean dinner (aren't you hungry now?)  The recipe I saw called for canned biscuits and a bundt cake pan, but since I didn't have access to either of those (I don’t keep canned biscuits around and the bundt cake pan is still in a box), we improvised!  I do keep Bisquick baking mix, and Dayna showed me how to use a round cake pan with an inverted bowl in the center for a make-do bundt-ish type pan.  The results were just great!  Next time, I think we'll also mix in a cup of grated cheddar cheese. I need the calcium!

We used the Bisquick recipe for family-sized biscuits, rolled that into a log, and sliced eight biscuits. Then we melted 4 tablespoons of butter and mixed in 1 teaspoon of onion powder, and 1 teaspoon of chopped garlic. She used Pam to spray the baking dish, then dipped each biscuit, and placed them in the pan. 


Clever use of inverted bowl inside the pan to make a ring of biscuits!

 Then she scooped the rest of the garlic and butter over the top of the biscuits.  She put the pan in the oven to bake for 15 minutes and came out beautifully delicious!

See what I mean? Why me Lord? I get to enjoy dinner while watching the sunset in my new house with my sweet hubby and my dahling daughter, Dayna.  A perfect way to end the day. Thank you Lord!

Stuffed Peppers

Bell peppers were on sale this week which made me crave stuffed peppers. I used to make these for the family all the time.

6 large green peppers
1 pound ground beef
2 tbls chopped onion
1tsp salt 1/8 tsp garlic salt
1 cup cooked rice
15 oz tomato sauce

Today I altered the recipe by using my salsa instead of tomato sauce and onion in the cooked ground beef.  I also used brown rice.  The original recipe suggests cooking the peppers in boiling water for five minutes before stuffing them with the meat filling - I skipped that.  After browning the beef, I stirred in the salsa and rice.  I stuffed two peppers and put them in the microwave for 10 minutes.  (The original recipe says to cover them bake at 350 for 45 minutes, uncover and bake 15 minutes more.) The microwave is so much quicker - duh! I know this recipe was yummy because JoPapa said "Wow! You should make these more often." I loved the flavor combo of green pepper, beef, and salsa! I sprinkled some bread with garlic and cheese and popped that in the oven long enough to melt the cheese. With a side salad, corn, and some applesauce we had a great, colorful meal! Oh...not all the meat fit in those two peppers so I put that meat filling in a quart jar and froze it.  We'll have a really quick meal next time JoPapa craves stuffed peppers!  Of course if you'd like to enjoy this meal, you'll have to come here or pay for my fare to your house. I don't think these stuffed peppers would ship well.
